At 7 PM, in the main tent at Piazzetta Magnani in Mercato Ritrovato (located at the Cineteca di Bologna), a workshop will take place where participants can learn to ferment vegetables alongside expert Giulia Pieri.
Each attendee will chop local vegetables and prepare them for fermentation in their own jar using the techniques demonstrated by artisan Giulia Pieri. They will take home the fruits of their labor. Fermented foods, which are not only healthy but also a simple way to enhance flavors, utilize an ancient and often overlooked technique that is part of local traditions, as seen in staple ingredients like wine, bread, and olives.
At the workshop's stand, participants can also discover and purchase products from Giulia Pieri, a craft producer from Cesena (FC). Her fermented vegetables embody the continuation and adaptation of a method that has been utilized for centuries across various cultures.
Registration is required by 6 PM on the Tuesday prior. In case of bad weather, the gathering will still occur indoors.
